Plucking the Leaves
The process begins with the careful plucking of young, tender tea leaves from our own tea estate. Only the top two leaves and the bud are selected, as they are the most flavorful and have the highest levels of antioxidants.

Withering
Once plucked, the leaves are laid out to wither. This step reduces the moisture content in the leaves, making them more pliable for the next stages. The leaves are spread out in a shaded area or controlled environment, allowing them to lose some of their natural moisture without being exposed to direct sunlight.

Rolling
After the leaves are sufficiently withered, they are rolled to release their natural juices and enzymes. This step helps in shaping the leaves and initiating the oxidation process. In green tea, this oxidation is minimal, helping preserve the fresh, green flavor.

Drying/Steaming
To prevent oxidation from progressing too far, green tea leaves are immediately heated. The heat stops the oxidation process and locks in the freshness, retaining the vibrant green color of the leaves.
